I love to have fun with paper, food, paint, music and events and just being creative in all of it. However, I don't feel the need to be a perfectionist nor a professional in any of my creations. I wish I could have a blog JUST about the art of cooking, photography, sewing, art, mothering, jewelry making, card making, dancing, gardening, deep spiritual thoughts, decorating, poetry, party planning, baking.... and the list goes on but I can't. I don't think I was created with the ability to focus on one task. I like all of these hobbies layed out before me and the freedom to pick whatever I choose depending on the mood or time I have.

Chicken Nugget Parmesan Bake

Sometimes meals aren't glamorous at least not in this casa.  I had a busy day with excercising, lunch date and meetings so I wanted a fast meal but not fast like Ramen noodles. Though I must confess my boys love that stuff,  ewww. 

Before I left for my meeting I cooked the spagehetti noodles and since I knew it would all eventually get baked I wasn't worried that they would get cold.  So that meant when I got home I needed to "make" the sauce and bake the chicken nuggets all in time for dinner. 

The sauce involved opening up a can of Hunts pasta sauce.  Before you laugh, I did mince some garlic and sauteed it in butter w/ Italian seasoning and then added the sauce in that mixture.  Poured the "homemade" sauce in with the noodles in a large casserole dish.  Topped with the cooked Chicken Nuggets, Parmesan and mozzarella.

Pop in oven just until cheese melts and voila just like Chicken Parmesan but kid friendlier!

You know that Proverb saying "her children rise up and call her blessed"  yup my kids couldn't stop telling me how good it was and how they wanted seconds.  These are the moments where I wonder about my amazing dinners  like: Sweet Potato Apple Stuffed Porkchops w/ Balsamic Orange glaze or Stuffed Chicken with Gouda, Sundried Tomatoes and Spinach that have never gotten that response.
